Pumpkin Muffins

If this is a repeat of another recipe, I apologize. I found this online and it looked pretty good.
Pumpkin Muffins
3 cups flour
1 cup brown sugar
2 Tbsp sugar
4 tsp (rounded) baking powder
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp pumpkin pie spice
1/4 tsp ground cloves
1/4 tsp allspice
1/4 tsp ground ginger
1 cup soy/rice milk
1 cup canned pumpkin
1/2 cup unsweetened applesauce
4 egg whites or 1/2 cup egg beaters
Mix all ingredients together. Fill muffin tins sprayed with cooking spray almost to the top. Bake at 325 for 20-25 minutes. Yield: 14-15 muffins
** For a variation, you can add 3/4 cup raisins and 1/2 cup chopped walnuts.

These sound wonderful. Wow, no fat at all in them!
Do you think I could make this into a loaf bread? If so, one or two loaves and how long would I bake it/them? Cindy

You sure could try it! The number of loaves will depend on the size of your loaf pan(s)... it should fit into one large loaf pan, but if yours are on the smaller side, you might need to use 2. Bake at 350... it will probably take an hour, maybe even a bit more, but you can start checking it at 45 minutes, just to make sure it doesn't overbake, especially if you do use smaller pans. Kree..............LOVE your new pic!!! It's my fav to date!! Is your recipe different than this one? I love the chocolate chip idea (chocolate rules) and am looking for safe, yummy things to bring to a GF support group meeting. (no problem here making it GF)

Thanks for the compliment on my new photo, Kandee! I like to change things up every once in a while. My pumpkin muffin recipe is different from this one, so here it is if you'd like to give it a try. They're very tasty!
Pumpkin Chocolate Chip Bread/Muffins
3 cups flour 2 cups sugar 2 teaspoons baking powder 2 teaspoons baking soda 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/2 cup oil (you can sub more applesauce instead but I'm fine with this since the recipe makes such a large amount) 1/2 cup unsweetened applesauce 8 egg whites or 1 cup Egg Beaters 2 cups canned pumpkin (solid pak) 1 cup chocolate chips (make sure they're dairy-free)
Mix all ingredients (chocolate chips last).
If making loaves, pour into pans sprayed with non-stick cooking spray and bake at 350 degrees for 1 hour or until knife comes out clean.
If making muffins, fill paper-lined tins (or tins sprayed with non-stick cooking spray) 3/4 full and bake at 350 degrees for 20-25 minutes or until set.
Note: Makes 1 large bundt, 6 small loaves, 2 regular sized loaves, or 24 muffins!

Wow, this sounds fabulous..(and you know how you got me hooked on your gingerbread muffins?)...I'm going to make this up first as a bundt cake/bread to try... you know me, the lazy cook. what do you think about a simple glaze over it?
It got saved immediately.

Now..my next quest is to find a soy sauce sub that has no wheat, no soy and no HFCS........and ideas?

Thanks heaps Rachel...you know what? I think, because this looks fairly spicey, I'm going to try them as pumpkin/chocolate chip donuts....mixing all together except the milk, then adding a little at a time to keep it thick enuf for the donut pans. I've been thinking about it, but didn't have a recipe...this just may work wonderfully!!

I'll let you know, but it may take a while. I'm back on a diet and donuts are OUT for right now. Last time I made GF chocolate ones I froze most of them...then (bad me) discovered they were almost as good to eat frozen as defrosted. Sheesh, If I make up something sinfully sweet for me..GF and IBS safe, I have to seriously limit what I have around for to long or I will inhale it.....I need a bunch of non-discriminating kids around to eat my experiments .........but until that time, the neighbor's dogs will gladly oblige me anytime..LOL.

man are they ever HEAVY!!! and dense. They have a good taste, but I'm not sure I like the heavy,dense part of them. I suppose it's from the 4 rounded tsp. of baking powder. I sure took a double take at that measurement when I first saw it, but thought I'd make them just as they were printed. Please don't take any offense at this reply, RachelT! As I said, they are very tasty, just too heavy for my likes. But, that's the fun of baking.....trying new things! The experimentation! Thanks for giving me something new to try today! It's great baking weather where I live---pretty, light, fluffy snow flurries!

Where are you in Iowa?? I'm in Cherokee... about an hour from Sioux City.
Heck... don't worry about offending me! I love hearing what people think about the recipes I post... good or bad! One thing though... I would think the baking powder would make them rise more, than anything else. Maybe there's something else about the recipe that caused the "denseness". Maybe try a little less flour?

I'm from Conrad, which is over North Central just a bit south of Waterloo/Cedar Falls. You are the only other Iowan I've seen on this board so far. You moved here from MN didn't you? Seems like I remember you saying that a while back. Did you get any snow today? We just had flurries, nothing much. Oh and by the way, my husband came home for lunch and absolutely Loved the muffins! Go figure. But, as I said before, they have a good taste!

Frozen donuts... oh yum!! I'll have to try that little trick once the weather heats up here!! It just doesn't sound appealing at the moment, since it's about 25 degrees out today and this is a heat wave, believe it or not!

If the libys solid pak was the pumkin mix,wal mart was out. I got the libys or watever, 2 cans of it. Wal mart had no dairy free chocolate chips..so I bought nestle premier white and herseys special dark..which one would u use? There was mostly milk chocolate of every brand.

If the chips both have milk in them I wouldn't use either of them. I haven't been able to find a white chocolate chip that doesn't contain milk. That is mostly what they are.

the pumpkins fine. I won't use the choclate chips either one sorry! If you have another store look for there store brand there sometimes dairy. If you have a kroger they have the kroger brand that are dairy free. If you still want some choclate then heres a quick tip buy a duncan hines devil food cake mix and mix 1 can of your pumpkin in it thats all nothing elese then put them in muffins cups or a 9x13 cake pan and bake at 350 til toothpick comes out clean there so good and fudgey it'll work till you can fid some choclate chips. I wouldn't use either one of these chips white chcolate has alot of fat. Its not worth a attack. I hope I have helped and good luck! merry christmas emmasmom ibs-c gas
