Hi everyone
Not sure how many of you would have eaten these before. They are somewhat of an Australian icon. The story goes that they were made to send to troops in World War 1 as they keep really well. I've never seen them last for more than a week, so I can't verify that.
Anyway, here goes.
Anzac Biscuits
Serves 20 125 grams Butter unsalted 1 tablespoon Golden Syrup 2 tablespoons Boiling water 1 tablespoon Bicarbonate of Soda 1 cup Sugar 1 cup Flour 1 cup Rolled oats 1 cup Dessicated Coconut
Instructions: Preheat oven to 150 degrees c. Grease a couple of baking trays or line them with non-stick baking paper. Melt butter in a small pan, add the syrup, water and baking soda, it will froth up. Combine all dry ingredients in a mixing bowl and add the butter mixture and mix well. Put spoonfulls of mixture on the prepared trays, approx. 5 cm apart, flattening them slightly. Bake for about 20 minutes until golden brown.

Oh how my heart breaks when I see an Anzac biscuit and wish I could gobble it up!
Biscuits are really hard to make IBS safe as when you remove the butter you lose that crunchy texture.
The only thing you could try would be to replace the butter with 2T canola oil and 4T apple sce. It will probablty come out more like a soft chewy texture though.
I would also either omit the coconut or replace it with 1t coconut essence just for the flavour.
If you try it let us know how it turns out.
