Thai noodles in Peanut Sauce

This recipe is taken from Looney Spoons by Janet and Greta Podleski. It's a fabulous low fat book by Canadians. Anyway, this has a yummy, creamy peanut sauce that I love. I make this when I miss creamy pastas.
Thai It! You'll LIke It! 12 ounces uncooked fettuccine or linguini 2 cups sliced sweet red pepper (finely in long strips) 1 cup snow peas, trimmed and halved 1/3 cup chopped green onions 1/2 cup low sodium, reduced fat chicken broth 2 teaspoons sesame oil 2 tablespoons reduced-fat peanut butter 1 1/2 tablespoons reduced-sodium soy sauce 1 tablespoon white or rice vinegar 1 teaspoon grated ginger root 1 clove garlic, minced 1/2 teaspoon crushed red pepper flakes 1 pound cooked shrimp (or I use cooked chicken breast)
Cook pasta. Drain and keep warm. Prepare sauce. IN large saucepan, combine al ingredients except shrimp. Mix well, bring to a boil. Reduce heat to medium. Cook and stir 3-4 minutes, until vegetables are tender-crisp and sauce is bubbly and slightly thickened. Stir in shrimp and cook just until heated through, 1-2 minutes. Do not overcook or shrimp will be rubbery. Toss hot shrimp sauce with pasta and serve immediately. 4 servings Per serving: 436 cal, 7.8 grams fat, 70.6 g carbs, 23.5 g protein, 338 mg sodium, 86 mg cholesterol. Calories from fat: 15.7%

Hi HanSolo - Made your Thai noodles in peanut sauce last night and we both loved it. I did a few changes,, tho (don't I always?) because of lack of ingredients.
Didn't have any fresh bell peppers so I put onions and mushrooms in instead.
Didn't have any snow peas so I used Sugar Snap Peas instead.
It tasted great until I put in the linguini and that seems to take the taste away but I did add an additional tbsp of peanut butter (I just love it). Dan kept saying how good it was and I liked it too (just like Mikey!).
When I make it again, I'm going to cut down on the broth and increase the rice vinegar and soy sauce. I can't smell and so I like things a bit tangy-ier than most folks.

So glad you liked it. I use bow tie noodles instead of linguini.
