OH MY !!!! I experimented this morning with this idea I had for this muffin, NUMMY !!!!! Is all I can manage to say. Here is the recipe for you all.
Shirl's SilkNog Sweet Potato Banana Muffins
1 3/4 cups all purpose flour 1/2 cup brown sugar 2 tsp baking powder 1 tsp allspice 1/2 tsp salt 1 1/2 cups mashed sweet potato (I used one can of Bruce's yams) 2/3 cup mashed banana (I had one on hand) 1/4 cup melted butter, or IBS safe margarine 2 eggs, lightly beat ( or egg subs) 3/4 cup Silknog 1/2 cup pecans, chopped (if desired)
Grease 2 dozen muffin tins (I made one dozen) perfect size. In a medium bowl, combine flour, sugar,powder,and allspice and salt. In a large bowl, combine potatoes, bananas, butter, eggs and milk. Blend well, add flour mixtrue and pecans. Stir just to blend. Fill 2/3 full and bake 400 for 20 minutes.
