Amazingly enough- other then the toppings which are optional anyway- this looks completely safe, and hey- if you have members of the household not on the diet they can add them!
*********************8 1 lb. white northern beans 6 cups chicken broth 2 cloves garlic-minced 2 medium onions-chopped 4 cups diced cooked chicken breast (or turkey) 1 Tbsp oil 2 - 4oz. cans mild green chiles-chopped 2 tsp ground cumin 1 1/2tsp oregano 1/4 tsp ground cloves 1/4 tsp cayenne pepper optional: monterey jack cheese, salsa, sour cream
Put the first 5 ingredients in a large soup pot. NOTE: If you use dry beans, you will have to cook them for several hours (per the instructions/until the beans are done). I usually buy either a jar, or the cans of ready-to-heat beans.
Simmer for an hour (after the beans are done).
In a skiller, sautee the oil and green chiles with the cumin, oregano, cloves and cayenne pepper. Instead of using the oil to sautee these, you can use Cooking Spray to omit the fat.
Put the green chile mixture into the beans. Simmer for at least 30 minutes longer. It will not hurt it to simmer longer, but will be done within that time frame.
You can top with the cheese, salsa, or sour cream if you want. Otherwise, it tastes good plain! Enjoy!
