Salmon patties

I made these tonight and tried to pay attention to what I put in. They came out better than ever before! 1 can good quality salmon- picked over and drained 1/3 of a cylinder of FF saltines, crushed 1T. Old Bay seasoning 2t. dill weed salt and pepper 1 bunch scallions chopped very fine 2 egg whites 3 T. mayo of choice
Mix gently but well. Form into 4 balls and drop into heated pan with Pam. Flatten with a spatula and cook until golden on each side.

Sounds yummy.... have you ever tried with canned tuna? I bet that would be good too.

No, never could stand tuna!

Yup I make these quite often with canned tuna, miracle whip and bread crumbs instead of saltines, but pretty much everything else the same. Modified it from a Real Simple magazine recipe I believe. It's really easy and really good! I'll try it next time with salmon though - I loooove salmon. Do you use canned salmon?
