recipes that use canned salmon

Any quick, simple, yummy suggestions to use up some canned salmon? I need to work off what I have and I don't have most fo the ingredients for Shell's grammas salmon loaf... and have never made one.. just want to find something to use the salmon I do have in the house... besides making it like i would tuna or something like that... trying not to bring in things like boxes of corn flakes since I don't want to have to store them in teh house that is on the market... things like that.. was debating making pasta sauce with some- may still do that this afternoon, we'll see.. going home sick, so I have some time.. but I need to clean up after whatever mess I make.. and need to get soem rest..

ZUCCHINI BAKE
4 c. sliced zucchini, 1/4 inch slices 1 c. chopped onion 1 1/2 c. shredded soy or rice cheese (original called for Cheddar) 2 cans (6 oz.) drained tuna or salmon
In separate bowl mix: 3/4 c. eggbeater or 6 egg whites (equiv of 3 eggs) 1/2 c. canola oil (you might be able to use a little less) 1/2 tsp. oregano 1/2 tsp. pepper 1 tsp. salt 1 1/2 c. RF Bisquick 1/8 c. soy or rice milk
Add all ingredients together. Spread in 8 inch baking pan. Bake at 400 degrees for 30 minutes

SALMON PATTIES
1 lg. can salmon or 2 sm. cans
1/2 sm. onion, chopped finely
Salt, pepper or Mrs. Dash
4 tbsp. water
ground cornmeal
4 tbsp. flour
In a heavy saucepan, cook onions with nonstick cooking spray. Mix together salmon, onion, salt& pepper (or Mrs. Dash), cornmeal and flour. Make into patties. Spray pan with nonstick cooking again and brown patties on both sides...

SALMON BAKED IN POTATO SHELLS
1 lb. canned salmon
8 med. BAKED baking potatoes
1/2 c. soy or rice milk
1 chopped onion
Salt
Pepper
1 c. bread crumbs
2 tbsp. butter sub
Flake salmon removing all skin and bones. When potatoes are cool, cut in half and scoop out centers. Mash thoroughly, adding soy or rice milk, onion and seasonings to taste. Add salmon. Mix lightly. Stuff mixture in potato shells. Cover with crumbs. Dot with butter sub. Bake in 400 degree oven, 25 minutes. Serves 6 to 8.

I haven't made these since starting the diet but they should be okay. Like all my recipes it is really loose. 1 can salmon, drained (hub likes the little round bones removed) 3 egg whites some saltine cracker crumbs lemon juice 1T. low fat mayo should be good dill weed (dried is fine) old bay seasoning (season well)
Shape into four patties and saute until warm and golden brown but do not overcook. I hope I am not forgetting anything. They are more moist with more mayo of course but...

Funny you should mention canned salmon now. I just found this recipe today and want to try it soon!
Pasta With Salmon and Dill (Makes 4-5 servings)
2 tablespoons soy margarine 2 tablespoons all-purpose flour 2 1/2 cups soy milk 2 teaspoons prepared mustard 2 teaspoons chopped fresh dill, divided 3 green onions, chopped 1 tablespoon lemon juice 1/2 cup frozen peas 2 (7.5 ounces) cans salmon, drained and broken into chunks salt and pepper, to taste 3/4 lb fettuccine pasta
1. Bring a large pot of water to a boil. 2. Melt margarine in a saucepan. 3. Stir in flour. 4. Cook 2 minutes on gentle heat. 5. Whisk in milk, and bring to a boil. 6. Reduce heat and cook for 5 minutes. 7. Whisk in mustard, green onion,lemon juice,and half of the dill and cook for 1 minute. 8. Meanwhile cook fettucine in boiling water. 9. When tender, drain well. 10. Combine sauce with noodles. 11. Garnish with remaining dill.
