Oh, I've been wondering for years now how she used to make this....she has been gone about 8 years now. I had been asking Mom & Grandma for the last few years for this....and FINALLY Mom told me that my Sister had borrowed ALL of Great Grandma's recipes over a year ago and she still had them. So... I attacked!! LOL Just kidding.... I just emailed her and she gave it to me. So, now I have changed just the dairy stuff to make it IBS safe. But MAN OH MAN we CRAVED this and she would make it for EVERY family gathering no matter what else was served THIS was ALWAYS on the table too!
Shell Marr's Great Grandma's Salmon Loaf Recipe
1 tall can of salmon (or 2 small), drained
1 small jar pimentos, drained
1 cup cooked macaroni
1/2 cup eggbeaters (or 4 egg whites)
1 cup soy or rice milk
1 cup crushed cornflakes (measure after crushed, or buy pre-crushed near bread crumbs in the store)
1 tsp. parsley
1/2 cup diced onion
1 clove diced garlic
1 cup grated soy or rice cheese of your choice (original called for med. sharp)
Press mixture in a loaf pan that has been sprayed with nonstick cooking spray and bake at 325 degrees for 1 hour. Let stand 5 mins before slicing.
Makes 8 servings (approx. 274 calories per serving, sauce not included)
*OPTIONAL SERVING SAUCE:
Saute 1 chopped green pepper, and onion in 2 teaspoons soy or rice butter (or butter flavored cooking spray) then add 1 can tomato soup-undiluted.
Heat til bubbly - serve hot in separate dish.

Shell, I just printed this one out, which for me, means it's a definite one to try. I can do this GF real easy too. With salmon I seem to need a buffer and all the solubles mixed into this fits the bill nicely.
Thanks, this sounds soo good, even if it is a bit unusual to put the cooked macaroni right in the loaf.
Got any more of great grandma's recipes you're gonna post?

Since Great Grandma is no longer around, I can't ask her.....so I need your help. The recipe calls for
1 cup crushed cornflakes
My question is.... would that be 1 cup before crushed, which is only like 101 calories. OR 1 cup already crushed (which is what I have) and that would be 640 caloires.
What do ya think? I plan to make this today.....

if it says crushed cornflakes then that is crushed before measuring. If it said 1c. cornflakes, crushed- then you crush after measuring.

LM's right -- crush first, then measure. Any kind of dry cereal would work, saltine crackers or vegetable thins would work too, but there IS a certain flavor that cornflakes contributes.

IN THE OVEN NOW!!
I divided into 4 mini loaf (disposable pans). Shane does not like Salmon...so it will make it hard for me to eat it 4 times...LOL. So, I will take one to my Boss in the morning and also bring the other two to work with me and my Dad will come pick them up for Mom & Dad to have for dinner Mom grew up with this too..so it will be a nice treat. No tricks here!! LOL
I'll let ya know how it turns out.

Got any more of great grandma's recipes you're gonna post? I'm gonna try to get the ALL from my Sister...and revise them. I KNOW there is one for her Apple Pie FROM SCRATCH... but I'm sure there is a TON of butter and/or shortening in it. But I'll see....

shell- I think I want to try this too, never had salmon loaf.. but then I'd never had a lot of things other people grow up on and this sounds yummy and like something I could make and package up to eat here at work nuked.... DH won't try it- he HATES salmon!

YES... I made it in 4 small disposible foil pans and gave 3 of them away...my DH would not try it either. Cook it up... and freeze some, take in micro containers for work....YUMMERS!!

Oh, that is WONDERFUL....I'm so glad you liked it!! I just talked to Mom & Dad too...and they said it was really good. Mom said, "You know what it reminded me of when it was in the oven?....MY GRANDMA'S!" And it sounded like she was ready to cry.... But a good cry...
I'm TRYING to get my hands on some of her other recipes too!

I have just gotta say... I found this the other day while looking up "pimento" (cause I was having a stuffed olive and killing time)... and it sounded SO good... and I made it, and I never really make anything other than boiled vegies... but OH - MY - GOD - this is SO YUM. and healthy! It's going to dominate my life for the next few weeks I reckon. Thanks Shell. yuuuuuuuuuuuuuuuuuum Champion.

Wow...can't beleive it's been almost 4 years since I made this last... brings back memories now that Dad is no longer around either You would think that salmon would not be a cold weather/comfort food.... but once it's turned into a "loaf" it sure is! Shane will still not eat it.... but I'm going to make this recipe for one of the first things I bake in my NEW oven when the kitchen remodel is done near the end of Oct.... will have to have Mom & Sister over to share it with me.

I made this 'knowing" cooked salmon is too "fishy" for me I can do sushi salmon, but cooked it is too much. But the receipe sounded so good... WEll it was indeed too fishy but my husband absolutely loved it. I am just mad he will be eating a cup of my expensive veggie cheese that went in here. I am going to go through this tread to see what you can use in place of salmon.
