Instructional Cookbooks?

Hey all!
Can anybody recommend a good, instructional cookbook? I'm really interested in cooking more, and can follow recipes well, but I want to understand the principles of cooking better. That way I can experiment making recipes IBS-safe ... The last time I experimented with a cookie recipe I got chocolate colored cookies that tasted just like a stick of butter Ick! I'm looking for something that explains what butter does to a recipe when you add it, or beating a mix, or baking vs broiling, etc.
Any help would be great! Thank you!

It's an "all-purpose cookbook" put out by Irma Rombauer and Marion Rombauer Becker. VERY instructional... everything from what flour is made from to every kind of measurement you can think of.

not sure if you can get them in the US but the GOOD HOUSEKEEPING magazine cookbook is great, it has pictures for all the basic stuff, and an explanation of everything you need to know. Delia Smith is also very good but might be to British for you

I put good housekeeping, joy of cooking, and a delia smith cookbook on hold at the local library. I'm willing to experiment with my food - you never know, I might find something I can't ever live without again!! (I always make b/f test first though )

If you get a chance, watch "Good Eats" with Alton Brown on Food Network. He's kinda goofy and fun and explains scientifically how recipes come together. For example, how to formulate dough to make crunchy vs. soft cookies.
It's a fun show to watch!

I saw an episode where he dressed up as a fisherman and talked all about shrimp ... am I thinking of the right guy?
I used to watch the food network all the time (it's what inspired my "butter-flavored cookies" ). I don't watch tv much anymore, but I'll have to keep an eye out for that one.
