Slow Cooker Chicken Recipes

Hi, does anyone have any crock pot (slow cooker) recipes? I just got one at my bridal shower and I would love to make a basic chicken or chicken and rice dishes. Thanks.

Did you try a board search yet? I know there's been quite a few chicken crockpot recipes posted lately, and there's a few listed in the recipe index too, but I don't remember all of them off the top of my head. I also don't know how basic you're talking when you say "basic". The beauty of slow cookers is that even a not-so-basic recipe is super simple.
Let me know if there's something specific you're looking for... I can dig around in my cookbooks and see what I can come up with.

It's seriously been a lifesaver for me this past year. I love to cook, but with me being so sick, it's been very hard for me to even care about cooking... so I throw a few things in the 'pot, and 7 hours or so later, the boyfriend has dinner. Perfect!
I don't know if you can eat tomato sauce and such yet, but one of my favorite dinners is:
1. A jar of pasta sauce - I use Ragu Light Tomato & Basil 2. A package of chicken breasts 3. A small can of mushrooms, drained 4. A teaspoon of basil 5. If you have it, 1/4 cup or so of red wine
Cook everything on low till the chicken's done, serve over spaghetti with soy parmesan and voila - chicken cacciatore!

I love it too! I work 9 1/2 hour days and I commute, so that is an extra 2 1/2 hours of traveling. So, the time I get home, I don't want to prepare things and cook, I am so exuhusted by that time I just want to eat. So, this is great I can make early in the moring before I leave and then my fiance gets home at 3:00, so he can watch it and take it off. It will be so much easier! I love this thing!
I can eat tomato sause, depending on what brand. Sometimes some of them bother me and other times. I have acid reflux. I will try this though, this sounds good. Thanks!

Hi Casey, On my lunch break, I went out and bought Ragu Light Pasta Sause. I just noticed thatit is sugar free. I don't usually like things that are sugar free, but I am going to give it a shot, because it sounds safe and it low fat. Does it have a bland taste? I will probably like it, but my fiance is so picky on the other hand! Will we notice that there isn't any sugar in it? Thanks.

I haven't noticed it tasting any different. I actually started buying that kind because it's one of only 2 commercial sauces that doesn't contain oregano, something I'm sensitive to... I don't think I ever noticed that it's sugar-free. LOL!
If anything, it'll be a little more tart than he's used to. Give it a little taste and see - you can always stir some sugar in, a teaspoon at a time, if you think it needs it.

Hi Sweetd! I also use the Ragu light and I think it tastes just as good. I never noticed it tasting any more tart, but I do stir in a tiny bit of sugar anyway just to reduce the acid... but then again I did that even before switching to the light variety!
As for your original question, I'd recommend these recipes that I've tried:

Here's my favorite recipe of all time: Bourbon Breast of Chicken
Be sure to serve with flat noodles, though; they really add a lot.
Congrats on the crock pot; it's a fabulous tool. I love mine; I bought it in 1975. If you want other great crock pot recipes, just scream! (I have a beef stew recipe I used to LOVE, and an Italian Turkey Sausage Spaghetti Sauce recipe that's to die for.)

Two other things that really help jar red sauce- nutmeg and cinnamon. I know it sounds weird, but it improves the taste a TON!
Another easy recipe that I am sure you can do in a crockpot is to put chicken on the bottom, put rice on top, add canned tomatoes if you like(do not drain), water (2x the amount of rice if no tomatoes used, or the liquid from tomatoes plus water to =2x), a little onion and rice- a very bland jambalaya! (you could also add some seafood, but I ignore the sausage that is in it completely) Add whatever spices you like to liven it up- crushed red pepper flakes, basil, oregano- whatever you can tolerate and enjoy.
