I'm going to a party tomorrow for my niece's High School graduation/18th birthday. Does anyone know of any safe foods I could take so I can eat something? I'm going to take the potatoe salad and peach cobbler. Does anyone know a good recipe for a plain macaroni salad.
Thanks, Karen

Sure! You can try my Macaroni Salad (it's a bit fancier than normal but still safe and yummy) with chicken, almonds and pineapple at this site: web page Or if you want a simple one: Cook 4 cups uncooked macaroni elbows and rinse with cold water (rinsing stops it from soaking up too much dressing) In a bowl mix: 1/2 to 1 cup fat free mayo or miracle whip (to taste) 1 tbsp or 2 green relish Finely chopped onion (1/4 cup or so) Finely chopped peppers (same) Finely chopped celery (same) Dash mustard 1 tsp dried parsley or more fresh 1 tbsp lemon juice Sometimes I add: dash worchestershire sauce (for zip) fat free italian dressing (zip) 1 - 2 tbsp Mix all and let chill in fridge for 2 hours.

Thanks for the idea. I can not eat any mayo as it contains dairy in it and that gives me attacks. I am checking out the health food store tomorrow for something that is dairy free. I'll let you know how it turns out.

I didn't think fat free mayo contained dairy. Check the labels. Maybe you can find a dairy free brand. I usually use ultra low fat miracle whip. I don't think there's dairy in it. I could be wrong.
If you check the recipe index, I posted a greek inspired pasta salad with a make your own easy dressing. It is entirely dairy free and loaded with flavour. You can always omit the soy feta if you can't get it.

Karen and Louise--
Do a search for "mayonnaise info"--I posted a list of ingredients to a bunch of brands of low-fat and fat-free mayonnaise awhile back. If nothing on that list is helpful, I thought I'd let you know that I've been told Nayonnaise tastes terrible, but Vegannaise (which I do plan to try at some point) is pretty good. And I know at least one of its formulas is dairy-free. But I don't know how much fat it contains.

I checked the fat free mayo and they say they contain dairy. I made macaroni salad today with the Nayonnaise and it tasted terriable. I'll check out the other one.

I've had the Veganaise and it was great. From what I remember though, it was fairly high in fat.

I made this for my bf and myself last week. It was FANTASTIC! He said it was the best mac salad he's tasted, and I was happy to find such a tangy side to eat. I don't know what kind of chopped peppers you used, but I used red bell pepper which was delicious! Thanks!
