My mom used to make this all the time when I was growing up; it's still one of my favorites.
2 cups flour 1 pkg active dry yeast 1 1/2 tsp sugar 1 tsp salt 1/4 tsp baking soda 1/4 cup cold water 1 cup soy milk Cornmeal
Combine 1 1/2 cups flour, yeast, sugar, salt, & soda. Combine milk and water in a small saucepan, and heat to 130 degrees. Add to dry mixture. Beat well, then stir in the rest of the flour to make a stiff batter.
Spray a large loaf pan with cooking spray, and sprinkle cornmeal on the bottom of the pan. Spoon batter in, cover with a damp cloth, and let rise in a warm place approximately 45 minutes.
Bake at 400 degrees 25-30 minutes, and serve slices toasted.

How very simple.... I would love to have two slices toasted with just "Pam pan fried" egg whites between them...yum!!

This bread tastes sooo good and I love the texture. And is very easy to make. It is now one of my favorites.
