Pineapple Raisin Cookies

1/2 cup applesauce 1/2 cup brown sugar 1/2 tsp vanilla 1 egg white 1/2 cup raisins 1/2 cup crushed pineapple with juice 1/2 tsp salt 2 cups flour 1 tsp baking soda 1 tsp baking powder
Preheat oven to 375. Cream applesauce and sugar. Add vanilla and egg white. Add pineapple and raisins. Sift together the dry ingredients and stir into wet ingredients. Drop by tablespoonfuls onto cookie sheets sprayed with cooking spray, and bake 8-10 minutes.

Ya know, I don't remember. This was a recipe from fatfree.com originally, and a lot of those recipes don't have yields on them.
I want to say 2 dozen; it seemed like it wasn't a huge batch of cookies, but they were pretty big, too. You could easily make them smaller, to adjust to calories that are more friendly to your food budget. Just freeze some of them if you end up with a LOT of them - like the pumpkin cookies I posted, they tend to mold quickly because they're so moist.
