I was digging through recipes tonight and found this old favorite of mine. I don't know if the leek soup mix is safe for everyone - I know that I never used leek, usually onion, and that I'm fine with it.
8 oz linguine, uncooked 1 cup frozen broccoli florets 1 pkg (1.8 oz) leek soup mix 1 1/2 cups soy or rice milk Dash pepper 6 oz can tuna, drained 2 tbsp sliced drained pimientos 1 tbsp soy/safe margarine, melted 1/4 cup plain bread crumbs
Heat oven to 350. Spray 8x8 baking dish with cooking spray.
Cook linguine as directed on package, adding broccoli for last 2 minutes of cooking time. Drain.
Mix soup mix and milk in saucepan. Heat to boiling over medium heat, stirring constantly. Stir in pepper. Combine the linguine mixture, tuna, pimientos, and soup mixture, and spoon into prepared dish. Mix margarine and bread crumbs, and sprinkle over top.
Bake 20-25 minutes, until top is golden. Serves 4.
If you can't do broccoli, experiment with other vegetables that are safe for you.
