Linz,
I think what they mean is the method we use to melt chocolate when you cook..its in the recipe for RKT's too and what I did was fill a pot with boiling water and then put a pyrex/glass bowl on top of it and but the ingredients in there, it melts stuff more gently than direct heat. Sinead

a true double boiler is a double pot- bottom holds water, top holds anything else.. but in actuality any pot of water with a bowl on top works, I use my large stainless kitchen bowls all the time to make Heathers pudding recipes! YUMMY! I freeze it in the ice cream maker most often.

I actually have a double boiler and use it maybe once a year. I think the bowl thing works great but no matter what the water should not hit the top bowl or pan.

true enough- I have a real double boiler, but tis small and i use the bowl thing a lot more, especially for heathers puddings as they don't fit in my 1 qt double boiler when i stir them

I think they might use the French word for it in the UK ... bain marie or something like that? In Spanish it's bano de Maria. I hope this is helpful. If not, I hope you don't think I'm nuts.
