Found this recipe on the web....my grandmother used to make something similar to this.
Depression Cake
INGREDIENTS: 1 cup shortening 2 cups water 2 cups raisins 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1 teaspoon ground allspice 1/2 teaspoon ground cloves 2 cups white sugar 3 cups all-purpose flour 1 teaspoon baking soda

DIRECTIONS: In a saucepan combine the shortening, water, raisins, cinnamon, nutmeg, allspice, cloves and sugar. Simmer for 10 minutes. Remove form heat and let stand until cool. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan. Stir the flour and baking soda into the cooled raisin mixture and mix until just combined. Pour batter into the prepared pan. Bake at 350 degrees F (175 degrees C) for 45 minutes.

A cup of shortening? Ouch. That would be way too high in fat for us as-is... I wonder if this could be lightened in the usual way, with applesauce and canola oil. Kree? Heather? Amie? I've never fiddled with a cake recipe containing shortening before.

it would probably be fine with mostly applesauce and a bit of oil... or prunes... or any other pureed fruit... I'd have to try it to see.. I agree- too much fat in the original for me..

In search of a substitute for shortening I found the following on-line. Will have to look more into it.
Vegan Shortening Spectrum Organic Vegan Shortening Nonhydrogenated, no trans fats, cholesterol-free, less saturated fat than butter. If you never cooked with shortening before you became a vegetarian, try this in your frostings, pie crusts, and cookies!

The rest of that really doesn't matter, if it's still the same 12g fat per tablespoon that regular shortening has... the finished product will still be too high in fat. If it's significantly lower, though, it might be something worth looking into, for sure!
