Italian Chicken with Sausage and Peppers
2 1/2 lbs chicken pieces, cut into 1/2-inch pieces 2 Tbsp olive oil 1/2 to 3/4 lbs Italian sweet turkey sausage 1 onion, chopped 2 green bell peppers, chopped 1 carrot, finely chopped 2 cloves garlic, minced 1 can (15oz) tomato sauce 1 can (19oz) tomato soup 1/4 tsp dried oregano 1/4 tsp basil 1 bay leaf salt and pepper
Rinse chicken; pat dry. Heat olive oil in large skillet over medium-high heat. Add chicken. Cook about 10 minutes, turning to brown both sides. Remove from skillet. Add sausage to skillet and cook 4-5 minutes or until browned. Remove and cut into 1-inch pieces. Drain off all but 1 Tbsp fat from skillet. Add onions, carrots, bell peppers and garlic to skillet. Cook 4-5 minutes or until veggies are tender. Add tomato sauce, tomato soup, oregano, basil and bay leaf; stir well. Season with salt and pepper. Add chicken and sausage back to skillet. Transfer to slow cooker. Cover and cook on LOW 6-8 hours or on HIGH 4-6 hours.
