Black Bananas and Bread

I would like to make the brown sugar banana bread but my bananas aren't quite black yet. They have brown spots. Do they have to be black? I just can't wait anymore. I just finished my zucchini bread today and I need breakfast for tomorrow!

Yes they need to be black. If not the bread doesn't turn out very good. I learned that the hard way. I'm going to make my banana bread in a few minutes...my bananas are very black!
Try one of Heathers other bread recipies. I love the lemon one and the chocolate applesauce is good to!

I was just going to recommend the chocolate applesauce bread - it's wonderful! Steph's right, the bananas really have to be very very overripe, otherwise you'll probably end up with bitter bread - and no, increasing the sugar to compensate doesn't seem to work.

You could make a different low fat banana bread from the internet and then next time make Heather's. I did that- both were good.
