What did I do to my Banana Bread ?

I have baked Heathers Banana Bread recipe many times. I waited until 9pm last night to make it because it is just too hot here to turn on the oven during the day. I may have been tired when I mixed it up, it had an after taste to it. I baked it in disposable aluminum pans, why I don't know, I have regular bread pans. The after taste was exactly like the one I get when I make zucchini bread. I may have used the same pans when I baked it.
I hate to throw it out, but it just does not taste as good as it usually does. There is probably no need to even answer this, it is probably those darned pans.

I use the foil pans all the time, for all kinds of baking, and have never noticed it tasting any different than when it's baked in any other pan. I've had that happen before too, though, in my regular pans - is it kind of a bitter aftertaste? I always blame the bananas.

Where the bananas REALLY ripe? That is the key to this recipe.

I just baked a banana bread and promptly threw it out! I didn't have enough bananas and put too much almond extract (should use ONE TEASPOOON...I used ONE TABLESPOON..YUK). But the real problem was not enough bananas..although they were perfectly ripe. Now I keep babyfood jars of all kinds of fruits for recipes...even carrots to keep my meatloaf moist! I add them to soups, stews, meatballs and baked goods. Babyfoods are natural and much healthier now a days.
