Tamy's taco night

I made some homemade salsa first (use as a condiment and not as a vegetable)
1/2 diced pepper (color of choice)
4-5 tomatoes skinned and seeded as good as possible. (over garbage can cut core out, pull back skin in strips, push fingers into seed cavities)then dice
1/2 onion minced
3-4T fresh herbs such as cilantro , basil, parsley and oregano
1 serrano pepper seeded and finely minced, it shouldn't make it too spicy but you can leave it out
1t. cumin
salt and pepper
1T olive oil
1T balsamic vinegar
1/2 lime juice
mix and set on counter for awhile
Spanish seasoned rice
this was kind of thrown together last minute
cook rice in ff chicken/veg stock
add salt, cumin and paprika and butter spray
top with almond cheese shredded
tacos
brown a package of extra lean ground turkey breast
add 1 package ortega taco seasoning and 3/4c water, this is very mild and Ortega has no bad stuff like msg
add 3/4 can ff refried beans
12 taco shells -heat in oven
shredded romaine lettuce
more shredded almond cheese (it has 1 gram of fat per serving)
and top with salsa.
makes 4 servings of 3 tacos each or 6 of 2 tacos (which is what I ate)
taco shells have 2 grams fat each
turkey has 1 gram
cheese has 1 gram
rice has 0 grams
salsa has probably 2 grams (there will be leftovers for baked chips)
tell me if something is wrong on this. FF refried beans are okay right? they are mashed. Also this meal was quite mild.

You are so making my mouth water. I am printing this so when I start to feel better I ca make this. TACO'S are my favorite food in the world. I can't ansewer your ? but had to say thanks. I will pray to the taco gods that this safe. I'm sorry haven't had one in over a month I think I am in withdraw

If you can tolerate them ok, then I'd say they're fine! To anyone else wanting to try this recipe, though, I'd recommend to proceed with caution, unless you've been eating refried beans and spicy stuff all along.
This sounds SO good. Bookmarked!
