A Recipe for approval and substitutes, Cheese Omelet with Tomato Chutney

This is the ordinary recipe. You could change it to Egg Substitute, and Soy Margarine and Soy Cheese if you cannot tolerate.
Crack 2 Eggs in a bowl, add 1 tbl Water, beat til mixed and slightly frothy. Set aside.
In another small bowl, place some chopped fresh tomato, about 1/2 a tomato in 1/2 inch cubes. Set aside.
In a large nonstick frying pan, melt 1 tbl Butter or Soy Margarine over medium heat. The bigger your frying pan, the quicker your omelet will cook and bigger the omelet will be.
Pour the eggs into the pan, rotating and shaking the pan gently to cover the bottom evenly. Keep rotating the pan to move the uncooked egg to the outside, use a spatula to move the cooked egg slightly so it doesn't stick. When ready, add 2 slices American or Soy cheese, torn in 1/2 to fit and lay the cheese one below the other to fit the middle of the omelet. Close 1/3 of the omelet to the middle, then the other 1/3 like a burrito. Slide the omelet onto a plate.
Wipe the pan with a paper towel.
Add another tablespoon Butter or Soy Margarine to the pan, put on medium high heat. Sprinkle 1/4 teaspoon dried or fresh minced Basil
Pinch Fresh Black Pepper
Pinch Sea Salt
You are making an herb butter to cook the tomato. When you can smell the basil and butter, add the tomato pieces, and gently move around in the butter to coat well. Cook the tomato until it is tender with a spatula edge in the middle of the pieces. Slide it right over the omelet. Enjoy! This is really good with sliced avocado on the side, dressed with Italian dressing. Laura Olson.
