I have come across this ingredient in a brand for vegan cheese. Is this something to stay away from? I didn't see it mentioned on Heather's book. Thanks for any help.

Hi there,

Potassium sorbate is used to inhibit molds and yeasts in many foods, such as cheese, wine, yogurt, dried meats, apple cider and baked goods. This preservative is a stabalizer that extends the shelft life of a product. Some companies are now using this in place of parabens. It won't trigger your IBS, however preservatives are not the healthiest ingredient. It's hard though to stay away from this ingredient when it comes to vegan cheese and soy processed foods.
