One of the few places I love to go and enjoy eating out is Disney World. Exspensive but when you have a food issue like IBS the waiter cannot take your order. THe chef comes out and you give him/her the IBS speech( no dairy, red meats, high fructose etc.)They then go about preparing a dish just for you. My wife and friends started asking for whatever the chef puts together for me when they saw how great the food comes out.

I've never been to Disney World, but I've gone to Disneyland several times and they do the same thing. There are no strange looks or eye rolls when I dictate my order, too! However, I have learned that in a regular restaurant, it is easier to just tell people ahead of time that you have "digestive issues" and they understand that there will be dire consequences if they slip in some oil or butter on your entrée.

PS - If you make reservations at D-land ahead of time you can prepare them for your dietary necessities
