Hey Guys,

Sorry if this sounds pathetic, but I don't know how to cook zucchinni and I would really like to make some tonight. Could someone please tell me how to do it? The easiest method possible would be great.

Thanks,
Kelly

Its easy, there's lots of ways to do it-

You can

1. steam it- chop it up in slices (like cucumber)and place in steamer
2. fry it in a wok with other veggies
3. Boil it in a pot with some water and salt (again chopped into slices) Cook it until its to your taste.
4. Cook it in a bowl with water in the microwave.

Personally I like to chop it and stirfry it with cooking spray, mushrooms and red peppers and some soy sauce.

Enjoy!

This is how I do zucchini: I put a tiny bit (maybe a teaspoon) of soy margarine in a bowl, add the zucchini, and microwave it till tender, about 5 minutes, stirring it once halfway through. Then I season it with salt and pepper, and Adam usually puts Parmesan cheese on his. You can also skip the margarine and use a little water instead.

It's just as easy to use the same method and saute it all in a frying pan, but I figure the microwave means it's already in the serving bowl... one less pan to wash.

You can also grill zucchinni! Just throw it on the grill until it starts to soften a little bit.

Hey Girlfriend!

I'm so proud of you! Cooking in your new kitchen?! That's terrific!

Zucchini is very easy to cook. However, it gets real "soggy" and "loose" if you over-cook it, so be careful. I just toss a little soy butter in a fry pan and slice up the zucchini (don't peel it if you can tolerate the skin), then lightly saute it over medium heat, flavoring it with a little salt and pepper. That's it. What could be easier?

Remember, don't cook it until it's too well done. I hate it that way. Ew.

Now, lets talk STUFFED zucchini. Oooh, baby!
