Like Beth, I am addicted to pre-steaming carrots and eating them cold as snacks (or as a side). I don't know why, but they taste better chilled! (If I had a food dehydrator, I'd be making tons of safe root chips with carrots and zucchini/squashes, sweet potato and taro and parsnips, etc.)
Anyways, here's what I ate:
--quinoa flakes
--white basmati rice, foil-baked veggies (zucchini, butternut squash, carrots) and 3 bites of spinach (bad idea!) with a little salsa
--1/2 portion of basmati rice and some leftover veggies
So, I threw out all the spinach in the house as it's causing me grief and sends my gastrocolic reflex into hyper-drive. I'll stick to summer and winter squashes, roots, carrots and listen to my guts.
Oh, one more thing--I'd forgotten how yummy and tummy friendly winter squashes are! Squash is also a great snack.
Kate.
