B: MOM with pecans 280 and 6g snack after exercise: 1 1/2 banana 150 and luna 180 and 4.5 snack later: pretzels and a few garden peas 130 and 1g late lunch: leftover fish, potatoes and spinach 400 and 8g tops sorbet 100 dinner: grilled whole chicken, orzo salad and 3/4 breadstick about 500 and 10g total 1740 and 29.5 15% fat Exercise: biked 20 miles with hubby, did some weeding, cleaned out the garage and vacced the car. My back hurts. Other: have a teeny bit of poison ivy on my leg which has decided to ooze some. I don't think I will end up in the predicament I did last November. Fingers crossed! P.S. I felt so fine after the fair Sat. but everyone who went with ended up with D from eating the fatty food. Ha ha!!!

In my usual hobbit style, over the course of the day and not in any particular order:
--1/2 cup applesauce (x2) --1.5 cups beets --2 ears corn --zucchini "unfries" with fresh cilantro --portabellini mushroom salad --spinach/dill puree (the green sauce)
Snacks Later, as I'm not at 1000 calories? Probably more applesauce or carrots or dry cereal/crackers. Some organic potatoe? Nothing exciting. I've been drinking a lot of organic "No-Chicken Broth" lately, too--it helps to keep my electrolytes in balance with the sodium. A busier day as I have a houseguest (a 13 year-old exchange student) from Mexico for a month.

Hi guys,
So this week my diet has been totally screwed up because my stomach has really flared up since going off the Asacol. For 3 days, all I ate was rice and rice cakes.. then I added in some chicken and I had some Luna bars, but I am pretty sure I had very few calories even on the days when I did eat more. Since I got so sick, I haven't had as much exercise with going out with the dog but today I did manage to do some elliptical-ing and some weights.
So this morning I weighed myself and.....
I Lost 1 Lb! That means, I have lost 5 lbs in total.

Congrats on your 5 lb loss! I'm impressed that even with how badly you're feeling you still managed to go for a walk and do some elliptical- and weight training. Excellent! I hope your stomach calms down and you start feeling better.

Melana, my guest/exchange student from Mexico is thirteen years old. She's just too easy to feed. All she wants is hfcs!!! Mostly she eats junk food--pizza, fries, take-out chicken. She does like eggs, though, for breakfast and toast. For lunch, she takes cookies, Coke, and peaches/grapes/strawberries/cherries. She is passionate about fresh fruit which is refreshing. The only veggies she'll eat are french fries, corn and carrots. And she's a regular cow girl, i.e. drinks a lot of milk. My Mum and I share the responsibility of feeding her. Note: she's used to being pampered, i.e. has servants, etc. My mother handles the animal end of it--mostly I just keep her stocked with Cokes and Orange Crush (soda) and mango juice and fruits, cookies and muffins and chocolate (treats). She likes this chocolate cereal and nutella, too. I have fun making her smoothies. It gives me an excuse to bake/play with dough/and stink up the house in a sinfully rich way. I love making pie!!! But holy cow! I can't believe she drinks that much milk. She loves ice cream, as well. Basically she just likes sugar and milk sugar (lactose).
It's sweet, though, when she hugs you good-bye on her way to school at 8 a.m. It's nice to share the love of the same style of music, too. The hug, this morning, was sweet.
No meal conflicts whatsoever.

Sounds like a great experience! She seems like a sweet girl. LOL at your description of her love for HFCS and lactose rich foods. Sounds exactly like my younger sister--down to the french fries, corn, and carrots. I guess she sounds like a lot of teenage girls!

We crank up the punk, the alternative, seventies stuff...it's really loud here! I made her some spicy unfried fries (organic potatoe and zucchini) tonight and papaya/mango salsa and shrimp kabobs with Sweet corn and SHE LIKED THEM!!! She likes either to eat with her hands, i.e. finger food or with a spoon, hence the lactose thing. Dip and dunk. Riddle me that one, Batman. We're having a movie fest every night, too. It's a regular slumber party here. Sweet with heat. I can't believe she liked my faux fries!!! I didn't tell her they were healthy. She plays the electric guitar and is an aspiring ballerina. I think I'll be reliving my youth over the next month. I picked up some pizza crusts for her as well, so dinner should be a little more inventive. She loves noodles/pasta, I found out. This rocks. I think I'll be taking her out for Pho, more often. (Thai/Vietnamese food). I'll just toss in some shrimp (her favourite) for her. I mostly handle breakfast, though. French toast, tomorrow, with fresh strawberry sauce, mango juice, and yogurt and banana/kiwis.
She's from a small town and goes to private school. I can't think of the name off-hand. She's been studying English since kindergarten.

Grab a broomstick and fly on over!!! Just kidding. She hates tea/coffee. She loves milk, mango juice, and SODA/POP...at least 4 or 5 cans/day. She loves that Hershey syrup in her milk or strawberry cow. She's one of those milk and cookies types. It's so weird having cow-juice in the house. It's even more bizzare trying to find these things in the store. Those are foreign aisles, to me. I'm losing my health food junky virginity!!!

Hahaha! My parents always fed us really healthy foods, so I was a total health food virgin as a kid - all the other kids at school knew about all these weird foods with brightly coloured packaging that I'd never seen before! But then I too became a 'fallen woman' lol... and now I'm a more or less reformed health food junkie. Y'know, like that scary freaky 'revirginization' process they have now? lol

It's too easy!!! I put them on a cookie sheet, oven lined with foil and sprayed with Pam. My personal favourite are zucchini. I just chop them up and sprinkle them with sea salt and herbs--really any sort of seasoning or spice that suits you. With zucchini, the sea salt helps sweat out some of the bitterness. You could use eggplant, too. Definitely salt that, etc. Any sort of potatoe/sweet potatoe works. I've even done it with turnip. Then, I crank up the oven, usually to about 400 or 425 degrees. I spritz the cookie sheet with Pam, but you could use olive or canola or grapeseed oil--whatever in a spritzer. If you want to give it some heat, use something spicey, i.e. hot pepper sauce or picante. Sometimes I get in really pungent moods and get out the wasabi or horseradish. Then I just bake it for twenty minutes or so. Sometimes thirty. I like them really crispy, so I broil them for a few minutes.
One neat thing I did the other day, was use grated beet and zucchini (a la slaw style, done in the food processor) and put followed the same oven process. I herbed it and added a little lime/balsalmic and a tad of lime rind. It was this really neat crunchy zucchini-beet slaw. Sort of more like a hash. I just added a little dijon for bite. Then, I tried it with carrot and WOW!!! Then, another night, I did a carrot/beet combo. Beet/potatoe is good. Sometimes even carrot/turnip/beet and any funk you can think of. I also did it slicing it finely in the food processor into rounds and it turned more into a crispy/crunchy scalloped salad.
I've also done it with spaghetti squash.
Afterwards you can jazz it up further, i.e. with salsa or a vinaigrette, etc. The stuff I use is pretty high sf stuff, in general. I've done it with green and yellow zucchini and potatoe as well. You just mix or layer it after.
I know you're into 250 calorie or less mini-meals/feeds and this very easily qualifies.

How do you chop the zucchini? Do you do matchstick size or diced, or thicker french frie size? Do you peel them firt? Same question for potato!
Do you sprinkle them with fresh raw herbs sliced up before cooking?
Thanks, you need to write a cook book! I can't remember all these recipes and I can't find them all in all these posts!

Silly question, but do you buy canned or fresh beets? I'm assuming fresh. I've never had beets or turnips, but I'm happy to try anything.
Kate, you now have a word document on my desktop named after you! I'm copying all of your ideas so that I can refer back to them as I cook each week!
Oh, and thanks to you, Kate, I've been able to eat greens every day without bloating and pain, now that I know how to cook and puree them! You are a Godsend!

I'd better start keeping one of those "KITCHEN DIARIES!"
I've always used fresh beets/turnips and assorted varieties at that, in the past. Only yesterday, did I use canned--unsweetened. Retrograde inspired me to pull a culinary "faster-one." Fresh, I think is still better, but the canned aren't bad. I felt this bizzarre need to open a can of something. The extra sodium is actually quite good for me, but you could rinse them. I guess it's akin to using canned or jarred tomatoes/tomatoe products.
I can't believe you've never had fresh beets!!! They're so yummy roasted. I like whipping them with potatoe for pink potatoes or using them as a red sauce. Mixed with potatoe and whipped, they look like veggie icing.

It depends. If I want it more like "hash" then cubes, or grated/slawed. Sometimes I like it "scalloped." Sometimes in big fat wide thin strips that are reminiscent of bacon, or even lasagna noodles!!! Often in "sticks" or fingers, like lady fingers or french fries. It depends on the zucchini! Do I peel? It depends. Usually I don't bother. Sometimes I peel some of it, though.
I generally season them and delicately herb them prior to cooking. I often incorporate more herbs if I make a fresh sauce or dipper to accompany them.
Do I bother peeling potatoes? I like the skins!!! But seriously, it depends on the potatoe. I scrub new potatoes. I'll peel a russet, I suppose. This sounds gross but sometimes I like the skins for dessert, i.e. broiled/baked/herbed like chips or crackers. It also depends on the day.
I love taking a 'tater and steaming it with some watercress or spinach and herbs, a little lemon and whipping it like mousse and putting it in a mousse cup. Sometimes, I'll even put them in a muffin cup, sprayed of course, and then put them in the oven to get a little "crispy." Sort of a mini-casserole. Ode to comfort cuisine!!! Green potatoes, LOL! Sometimes pink and often orange.
