Concern about fruit and vegetables

Ok, I'm relatively new to this diet, but I am really concerned that I am not getting enough fruit and vegetables. I'm a carboholic anyway so I have always been somewhat concerned about whether I'm getting enough of the healthy stuff. Now with this diet, it seems I'm not supposed to eat the healthy stuff. I find I can get some fruit with my smoothies, but I'm really stuck on the vegy thing. It's summer in Vermont and the only time of year to get great vegies. I've seen the recipes and I just don't want to cook in the summer - I want fresh, raw vegies and all the great berries and melons. I made a vegie smoothie last night with an apple, carrots, cucumber (sans seeds), applesauce, apple juice, and chopped ice. It was good but left me so bloated I looked like I had swallowed a truckload of watermelons. I need some advice and suggestions. Thanks.

How about cooking veggies in more summery ways? I've found that you can grill just about anything. Grilled veggies always taste so much better than plain steamed things. I also rely heavily on my microwave during the summer, because there's no way I'm turning on a stove. I know it's not the same as fresh raw veggies, but fresh cooked veggies eaten cold really aren't so bad.

Also, have some soluble-fiber food before you eat the veggies... that'll lessen the impact significantly.

You're right - I forgot about the grill. Something new to perfect, but so good. And cooked cold is a good idea, too. Any suggestions on the fruit thing. I crave strawberries, watermelon, cantelope. I actually had a slice of cantelope with lunch after golf and it didn't seem to bother me, but probably because I was loaded with Immodium to get through 18 holes!

Susan, check the recipe board. You'll find all kinds of great veggie recipes there.

When I began incorporating veggies into my diet, I did it very slowly by throwing my faves into home made stock. Veggie soup is magnificent! With some fresh sourdough bread? YUMMMMM.

Raw veggies are really tough on the tummy; I frankly wouldn't go near them, not even now that I'm stable. No way. Hubby loves jicama, and he's always chomping away, asking me if I'd like a bite. I don't think so!!

However, I will go for a salad. There was a time when I couldn't; I'd have terrible D and cramps before getting home from the salad bar. Now I know how to do it, and it doesn't bother me. This is what you do: first, take an Equalactin. (There have been MILLIONS of posts about this incredible stuff on the Boards, so you can do a search if you want, if you've never heard of it -- it's a must have!) Take the Equalactin on your way into the restaurant. Then go up to the salad bar and fix your faves. Pass on the fresh raw broccoli; too tough to digest! (Damn.) Maybe a few fresh peas though -- but not too many. And by all means, stop by the bread counter! Then go to your table and chomp away on the BREAD FIRST. Then enjoy your fresh salad. Yum.

Oh, BTW, be sure to use the low-fat dressing, if available. At Izzie's they don't have such a thing, so I have a little of the regular dressing -- but just a little, just enough for a taste.

Sometimes I even have another Equalactin AFTER my meal. Just as a security blanket.

Works every time.

Canteloupe should be fine if you have the soluble beforehand. Some sourdough maybe? Ditto with the strawberries and watermelon. Stay clear of apples, especially the skin -- ditto with the grapes (unless you know someone who'll peel 'em for ya!).

I've been thinking of investing in a juicer; that way I can have all the fresh fruit and veggies I want without the worry. Lets see ..... Brussel Sprout Juice? Broccoli juice? Yum yum.

You're a great source of information for me. Had NO idea what a jicama was!! Had to do a google search. I now know what they are, what they look like, and where they originate from.

Ok - no off color replies here, but bananas make me gag. I can eat banana bread, but that's about it for the banana thing. Even the smell makes me nauseous. Must be some inner genetic thing. I have to alter my smoothie recipies. If I can smell banana it won't go down.

I can *occasionally* eat bananas, but I regret it for at least a day afterwards - horrible indigestion. I can do banana bread, but can't tolerate the fruit alone at all. Nasty, mealy things.
