Hey Kelly and all,

I keep mine in the fridge. There is an actual pull date on it that is like a month away. I couldn't do lettuce for almost a year and then started putting a leaf or 2 on a sandwich and slowly increased from there. The butterhead, for some strange reason seems to be the easiest to tolerate. Here is the web site for the kind I get:

My thinking is that when you get down to only a leaf or 2 left you could plant the roots and have it still keep growing. But me? I'm a disaster with growning things now days so to me spending another $3 for a head is well worth it.

I used to love salads too, so I do get where you're coming from. However...I'd avoid them! I now only have a little bit of lettuce in otherwise safe rolls. Think of it like this - if it goes straight through you, then it can't be doing you any good cos you have to digest food to get the nutrients! Andif if triggers an IBS attack (and I bet it does) then its actually hurting your body.

I now TRY and stick to cooked veggies with safe meals. Even stir-fry isn't well-cooked enough for me!
