Carrots.....is it true??

Someone just told me that raw carrots are a veggie but once u cook them they are just starch....please give me different feed back to shut her up...

Cooking veggies does not change all of its constituents to starch. For example, it does not change the insoluble fiber which is indigestible into digestible starch. This require an enzyme not just heat from cooking. Also, cooking carrots makes betacarotene (vitamin A) more accessible than eating them raw. This is true for other veggies too such as lycopene in tomatoes.
