SOY EXPIRATION DATES

Ok...first I am VERY excited because my grocery store carries the Tofutti Sour Cream...However, the expiration date was in August? That is a long time off. I am so used to dairy products only lasting a couple of weeks at best. So does soy keep longer or something? If so, how long can I refrigerate once I have opened?

Usually, I keep the soy milk weeks past the date & it's still fine, but I've never kept the sour cream long.

I think the way it works is the expiration date that's stamped on the container is supposedly the date that you can use it by. (Provided you don't open it!) The dates on soy milk are a lot more expansive than regular milk.

However, once you open it, it's a different story. For example, on my carton of "Egg Beaters", the stamped date on the carton says "Use by February 2, 2004." That would mean it can be used for another month, right? Not so -- because I opened it. On the bottom of the carton it says: "use within 7 days of opening."

You're supposed to use Egg Beaters within 7 days?? Wow, I've never done that. I guess I should be more careful of reading labels. Although it's never made me sick, so maybe it's just a guideline...

Ok...I looked all over this package. It has no use by date or use within a specified amount of time. Any ides here?

Honestly, I've kept Tofutti Better than Cream Cheese in my fridge for months and never had a problem with it. Then again, I don't always use opened soy milk within the 2 weeks it says on the package either. I think what really matters is how it looks and smells. If it's not getting slimey or clumpy, I'd say it's probably fine. In my mind, a lot of things are okay for longer than it says on the package!
