Heather says "Substitute cocoa powder for solid chocolate in baking - fabulous chocolate cakes are your IBS-safe reward!" and "Chocolate milk [soy, rice, etc] is delicious cold and heated up for glass of hot cocoa!"

I make chocolate syrup from cocoa and use it all the time. Enjoy!

Anyone happen to know if cocoa powder is permissible for GERD? I'm guessing not, but it can't hurt to ask......

In this newsletter Heather says "Unfortunately, chocolate in any form can worsen reflux, so you may well have to forego this particular treat altogether. Why the discrepancy? Chocolate contains theobromine (a compound that's also found in tea and coffee), which relaxes the esophageal sphincter muscle (just like peppermint), and triggers reflux. So chocolate, like peppermint, is one of the few foods that can be perfectly safe for lower, but not upper, GI problems. "

I use Rodelle cocoa powder because it is very finely ground and has a wonderful rich flavor. Here is the recipe. I believe it is on the board somewhere.

3/4 cup cocoa powder
1 1/2 cup white sugar
1 teaspoon decaf instant coffee
1 teaspoon vanilla
pinch sea salt
1 cup water

Mix dry ingredients well in a pan. Slowly add water and vanilla until powder is reasonably well dissolved. Heat on medium with regular stirring until mixture just begins to boil. Turn off heat and leave pot on burner for 4-5 mins stirring periodically. Put in container, store in fridge use as required. I love it on toast

I was searching for cacoa powder (and found this post), since I found out this also triggers my IBS..

It triggers nausea coming from my bowel (about 1-1.5 day after eating it, not directly). So I guess it is not an upper GI problem in my case?

I guess it's a dutch brand.. 'Fair Trade Original/Max Havelaar'.

The ingredients just say 'cocoa powder'. It's biological, made from beans from Latin America. Nothing strange I guess??

Interesting. I some times make a chocolate syrup from the Fair Trade cocoa powder we can get here. Mind you I heat to a boil with sugar, water, vanilla and a bit of salt to ensure it is well dissolved. I find it is okay. However, dark chocolate (90%) in bars seems to be a bit of a problem. Just another IBS mystery - I guess

That might be the problem.. I used it 'raw' with some diet margarine and rice syrup (since I cannot have sugar) to make chocolate spread.

But cocoa powder is already heaten, right?

I believe it is the solid left from the chocolate liquid most of which is butter fat. Cocoa powder is high in fiber - about 20-30% by weight - most of which is insoluble fiber.

However, I use 3/4 cup of it with 4 cups of sugar so a tablespoon contains about 1/3 of gram of fiber. It could be that is too much for you.

Not sure what the heat does but it seems to make it creamer

I see.. cocoa is high in insoluble fibre, hmm. That would probably be the problem for me.

I thought the heat would make the fiber easier to tolerate (just like cooking) (??) Or is that totally different?

Unfortunately, most cooking does not tend to change the nature of insoluble fiber very much.

I have GERD and a hiatal hernia, and have become increasingly intolerant of cocoa. I used to be a chocolate addict, and can now tolerate none. Cocoa powder gives me awful reflux and uncontrollable burping. If I'm having a good day, I can tolerant a tiny bit of cocoa cereal (make sure it's IBS safe) or a safe baked good ex chocolate cake. Cocoa not baked into something is a big no no for me, and some days even the tiniest bit of cocoa in any form gives me reflux and nausea.
