Need help with possible gluten allergy

I haven't been tested,but thought I might do a gluten elimination diet for a little bit to see if it helps. I read possible symptoms of the allergy and think I might have it.
I feel overwhelmed about where to start and how to do it. Do I stop cold turkey? Do I ease it out of my diet? Are there links on here I haven't found that will help me with this?
I just started reading about it today because I've been having some joint pain that the doctor hasn't found causes for. I site I found said that joint pain, sinus infections, ibs, are some symptoms (as well as others) of an allergy to gluten.
I was test some years back for other bowel problems when I was diagnosed with IBS. (They came back neg.)
So please steer me in the right direction.

You can quit cold turkey- in terms of gluten, that is the best way to do it. If you need help with gluten free foods, there are tons of websites with full lists, and most grocery stores now have lots of gluten free food. It's a lot easier than you think. To start with remember, all unprocessed meats, any fruits and veggies are all gluten free. So if you have no idea what to eat, you can eat those while you learn.

I think I'll wait until I can get tested. I though I'd just take it out of my diet, but that's a HUGE change. I knew it was in a lot of things but everything?!
Hopefully I have just IBSD.
