Is is ok to make pancake mix the night before and refrigerate it over night? Will the pancakes turn out just as good and fluffy??

Yes to both. I do this all the time because it's so much easier to make a double batch and keep it on hand. However, I don't keep it for long in the fridge; otherwise, it becomes real thick and you have to add more soy milk to the mix -- when the surface of the batter in the fridge turns dark, you know it's been in there too darn long!

bev; you must do something different tha n what I do. When I tried to keep pancake mix overnight it was flat the nect day,. I think it is better to make it up all at once and then just reheat in the microwave as you need it.

It would probably work best if you wait until the morning to add the baking powder. This should keep it from being flat.
