Palm sugar can be a problem for individuals that have problems with foods with excess fructose

Hi Syl,

I bought a bag of the 100% organic coconut palm sugar (hoping to reduce the glycemic index when I make baked goods). I read online that it is composed of mostly sucrose (70 - 79%) with the rest being glucose and fructose. I am very sensitive to foods with excess fructose...do you think that this is something that I should avoid?

On average palm sugar is 85% sucrose, 3% fructose and 2% glucose. It contains more fructose than glucose. It is best avoided by individuals with fructose malabsorption.
