Syl,

USDA says we are supposed to get 5 veggies a day. If we are supposed to get 5 veggies a day, how do you do it on the EFI diet? or do you?

I try so hard to get my 5 veggies. I get plenty of fruit every day, but veggies are harder for me.

I am probably not the right person to ask. I am very sensitive to veggies.

My veggie diet is limited to boiled peeled carrots, peel cooked zucchini, very small amounts of sweet potato, squash and roasted peeled red peppers and a couple of tbs green peas every once in a while.

I eat 1/3-1/2 cup boiled peeled soft carrots at lunch and supper, 1/4 cup zucchini with lunch and what ever other small amounts of the other veggies I feel I can handle at meal time. Also, I save the water in which I boil carrots or other veggies and use it to prepare rice, sauces, anything that needs water. I can use the vitamins and minerals that leach from the veggies into the water to increase my nutrient intake

There are days when I think I am going to turn into a boiled carrot Other days I call soft boiled carrots the IBS miracle veggie.

I have been trying to understand what happens to a carrot that makes it IBS friendly when it is cooked. During my investigation I came across the carrot museum web site. It is rather neat! Apparently carrots become more nutritious when they are cooked because the tough insoluble fiber cell wall is degraded releasing more antioxidants.

The purple carrots have even more antioxidants. Carrots were originally purple along with many veggies.

Fruits and veggies are actually an IBSers friend! There are so many that are pretty easy to break down plus they are low in fat to bring a meal to a better fat percentage. When I have counted my servings per day during work wellness challenges I have usually had 10 per day (except on sick days of mostly oatmeal).
Some of the easier ones are:
bananas (for most)
papayas
mangos
avocados
peaches
pineapple
pureed fruit like applesauce or any other, canned fruit
kiwis and berries with caution
(grapes and melons, along with peel on apples and pears are IMO the toughest fruits)

carrots
sweet potatoes
squash
potatoes
mushrooms
cooked peas
cooked green beans
spinach
asparagus
beets
parsnips, rutabagas, turnips
baby lettuce is better than iceberg and napa cabbage is better than regular
cooked greens like collards, chard, mustard
leeks and scallions are better than onions
Personally I eat broccoli all the time but I can't recommend it. I also eat lots of onions, garlic and hot peppers and those things aren't my problems. Julienned ginger added to things is an IF but is great for tummy trouble. Also fennel bulb is supposed to be good on tummies despite the IF.

"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!

Thanks, Little Minnie and Syl for both of your great expertise !

I want to try leeks. I eat some veggies with no problem, and I eat some broccoli, onions, and garlic, sometimes, with no problems. I just make sure to take a Bean-o before and some charco caps after eating. LOL (That's alot of gas prevention)

Gas and bloating are my only problems with veggies. They don't cause pain. It's the dumb food choices that cause pain. (Like thinking I can eat some of the DH's steak or a whole bottle of champagne!!!!!) I did both Friday night and whooo weeee did I regret it all weekend. I'm still bloated, but I don't hurt so much. The champagne was a magnum bottle!!! (I drank the WHOLE THING by myself. The DH had Blue Moon beer which are my other alcoholic favorite, but they tend to fill me up too much.) I'M NOT PROMOTING DRINKING ALCOHOL. DON'T DO IT. I QUIT AFTER FRIDAY NIGHT!!!!!!!!!! IT'S JUST NOT GOOD FOR THE BELLY, THE MIND, OR THE HEAD (THE NEXT DAY )

which type of gas does bean-o help with? veggies? is it okay to take them with a meal even if i take a peppermint cap too? thanks.
