Help! How much soluable fibre do I need? What should I eat?

OK,so I'm embarking on Heather's diet and am confused as to how much fibre I actually need. I'm still experiencing symptoms - gas, bloating and mostly C with occasional D. I think soy may be the cause of some of this? Could anyone give me samples of daily meal planners as I'm finding what to eat hard! I'm also gluten free which adds to the confusion! I'm taking a SF powder once a day before breakfast also, is this enough? I'm in Australia so some of the products on this site are unavailable to me.

Just so you know 1. it is hard to figure out new foods to eat when you first start out 2. the diet is not a cure, neither will eating 'safe' foods make you better. The whole idea is to trick your gut into being so soothed it won't act up as much.
For many taking around 2T of acacia a day is where they stabilize. Eating a SF bowl of cereal or oatmeal, SF fruits for snacks, rice or bread or root veg with your lunch and dinner, is a good place to start. The more posts and recipes you read here, the more you will start to get what your average diet should be like.
