Water/liquids clarification

I have a couple questions regarding this... I heard it is best for the digestion to drink while eating a meal however, in the EFI book it says you should wait until after the meal... If you are supposed to wait then how long is a good time frame?
Why is the required water distilled? Are there too many impurities in regular water? I have noticed that tap water can be the cause of an attack and have switched but I was just wondering why water would cause someone to get sick?

Depending on the water, tap could be a problem, but it is rare for the home water you are used to to be a problem. When travelling it definitely can be.
Most people find eating to be filling enough and take it easy on beverages at meal times. It is a personal thing I think. If you eat really, really slow and take little sips of water that is best.
