It said in Heather's bible to replace the butter used with 2T canola oil..so my normal recipe for rice krispies was..40 big marshmallows 1/2 stick of butter/margarine (replace with the canola oil) and 5-6 cups of rice krispies.. the marshmallows melt a little different and it requires a little more stirring of the marshmallow mixture but they are yummy and really hit the spot for an easy snack! Enjoy !

Smoothies and shakes are my favorite grab-n-go snack. I like the Banana-Carob Smoothie in the EFI cookbook. And I make up my own as well. Chai tea is a good drink (also in the cookbook) Try some low sodium saltines with a little peanut butter... mmm... childhood! And any of the good breads and deserts in the cookbook. That is if you have the cookbook! HTH

TRy microwaving the marshmellows in a big bowl then add rice crispies. It eliminates the need for any oil or butter.
Then pour into a plastic dish.Once cooled they are so easy to pop out.
