How much is too much?

I am IBS-D only. I have been taking Heathers fiber, multivitamins, extra calcium, just started with Align and zoloft for my anxiety and soon chia seeds... is this over kill. Are there any risks to taking all of these?
Also about the triggers. Is it abnormal that triggers change all the time. I remember before I found this page things I ate didn't effect me the same each time I ate them. One day steak would not give me problems and then the next time I ate it, it did. Is that normal for food to be a trigger one time but not the next?
I hope you all could help! I really appreciate it since I am kind of new and am still in the learning stages.

Hate to be a bother but does anyone have any insight into my situation? I would like to make sure my body doesn't go into overload and at the same time stop the D!!!

It's probably not overkill...my only concern would be with taking all of that, how will you know what is working and what isn't? You may or may not need to take all of that, but you won't know what is working for you and what isn't. Does that make sense?
Also, yes the triggers can be like that. I am exactly that way. I never know from one day to the next, so it is very confusing and frustrating. It does boggle the mind when one day, I can eat a cucumber with no problem, and then the next week, BAM, big problem. It is very confusing to me as to why this happens. I mean, you would think once a problem, always a problem. Kind of like if you were allergic to some food, now that would be a problem all the time. It makes no sense to me at all.
I guess if you mainly stick to the diet, you would be better off.

I don't see a problem with the things you're taking. My own regimen is multivitamin, calcium, probiotics, chia seeds, lots of soluble fiber (though through food, not supplement), and a healthy, low-fat diet. The only danger of "overkill" is if you start to get constipated. Be sure you're drinking lots of water.
I'm not taking any prescriptions like zoloft, however. If you're really concerned, you might ask your doctor if it interacts with anything that you should be aware of. Tell him what else you're taking.
