Regressing back to daily C

i eliminated gluten, eggs, dairy & soy from my diet a year ago. for 10 months i was having a normal BM every day - i thought i was cured. now all of a sudden ive regressed and have daily constipation. My stools initially come out like hard twisted knots and usually flow smoothly after. been trying acacia fiber but it just makes me gassy. Why have i regressed? i dont get it. i almost feel like going back to eating everything since im already constipated

chicken, brown rice, quinoa, avocado, red luttuce, potatoes, tilapia, green beans, brown crispy rice cereal with rice milk - thats pretty much it...i usually eat bland food and dont over season
