In one of my early posts I vented how resentful my husband was because I suddenly changed the type of meals at home from heavy greasy southern ones to more IBS friendly foods. Well things became worse before better. We resorted to each cooking our own meals. He would sit across the table from me, as if to spite me, with a big juicy steak or barbecue ribs and mashed potatoes with gravy – the works or he would come home with a bucket of KFC and there I sit with my turkey burger and baked Ruffles.
This went on for about six weeks. In response to him making fun of my meals, I told him that he would probably lose a bit excess weight if he followed some of my diet, plus the recipes I made from this site and Heather's book looked really delicious – I obviously was not suffering too much. Last week he started making meals we both could eat, he made baked chicken with pasta. He asked me three times what kind of pasta I could have and had me explain the difference…it warmed my heart. He notices too that I am healthier, happier, and not as stressed. I am so glad he is "adjusting".
I really appreciate all the information and resources provided by Heather and everyone, it truly makes a difference in people's lives.
Thank you, Karen
