Sure! Here's two that I was able to find easily...

Quick Ginger Carrot Soup

Ginger Butternut Lentil Soup

The Ginger Butternut Lentil Soup is one of my all-time favorites; I know you have a hard time with beans, but lentils are probably the easiest beans to digest, plus they're all blended so they're WAY easier on the tummy. DH and I are actually having this one for dinner tonight! I like to double the recipe when I make it and then freeze half of it for another night. Good luck! Oh, and Sarah Kramer has three great vegan cookbooks, which is where these recipes came from, and they have a lot of yummy soup recipes, many of which are blended.

Thanks. I would love to try lentils but to be honest I am scared cause I have been with out any type of bean for about 2 years now. Do you any any ideas on how to incorperate them slowley and how much to start with? thanks

I really think you should try the soup. I don't think the recipe calls for very much, plus they will be cooked AND blended - you can't make them much easier to digest than that!

Take your Beano or GasStop or whatever digestive enzyme you have before you eat them, and just give it a shot! You won't know until you try... But you also need to NOT psychologically work yourself up over them and give yourself an attack that way. I've been guilty of that before.

I agree, lentils, well cooked and pureed, with some Beano, are pretty okay with me. But if you do try this recipe, maybe try it without the onion first, so if you do get problems, you'll know whether it was the onion or the lentils. Personally even the slightest bit of onion wreaks havoc on me.

Hi Lisa Marie,

Just a question about the butternut squash used in the lentil soup. Do you use fresh butternut squash, cut up in cubes, put in the soup, skin and all??? Skin seems pretty tough, but does it get really soft and mushy when cooking?

Definitely peel the squash first and remove all the seeds! I don't think the tough skin would sit well with my tummy - nor would it taste very good!

is there a certain limt I should start with I haven't had beans in almost 2 yrs and I am afraid of having a attack. Thanks for the help I appericate it!

I would think 8oz (1 cup) of either of these above soups would be a serving size. No more then that your first couple of times.

FYI. I have just started to see ads in magazines for a butternut squash soup made by Campbell's/V-8.

I plan to get some this weekend.

Anyone try this yet?

I look at these they have milk in them instead get the imagine Organic Creamy Butternut Squash Soup its wonderful. You can find it in the Health food section of your store or a health food store. Its very good. I got 3 meals out of 1 box! Hth
