Sarah, I hope it's not the dairy that caused you C and bloating today . I've been hoping I could have it too since you seemed to be doing so well with it.

Recently I realized that I've been going overboard with chocolate. I made sure it was GF and dairy free but I have been eating it in rather large quantities (even if it was after dinner that had SF). It seems to me that I can tolerate it one day, then the next, but then if I have it again it's just too much and I get sick. Fortunately there's no more of that brown evil at the house so I'm determined to try to go a few days without eating any and seeing if I get better. So I was wondering if it could have been chocolate that caused you this reaction?

I hope I'm making sense. I'm incapable of thinking straight because I'm so hungry , I'm fasting for tomorrow's test so I haven't eaten since mid-morning and now it's almost seven o'clock .

How do you incorporate both diets into your day? What do you eat for your meals and snacks and drinks? Any help would be great! I need some inspiration or something.

I think you are right. They don't know...they are scientists and go strictly by test results...and there are none for IBS and very rigid ones for celiac (no GI exists to them, it seems).

Sarah, are you feeling any better today? I went about 3 weeks or so without being C at one point and then Bam! it hit me out of nowhere again. I'm back to the old cycle of being C once every 7-10 days. But if that's it, then I'll gladly deal with it!

I like to cook (when I have the time) so often I make more servings of a recipe and then have it for lunch the next day. Since I was never a huge pasta eater anyway I didn't feel like giving it up was a huge sacrifice. Plus, I like the GF brown rice pasta so that's what I eat if I want some once in a while. Very often I just take my favorite recipe and adapt it to fit my diet. To thicken stews and sauces I use corn starch or a finely grated potato. If I need to add milk or cream I add rice milk (not the same but usually still pretty good). I reduce the amount of fat - most dishes are forgiving and don't actually need all that fat. Very often (when I'm lazy ) I just throw a piece of meat on the grill and then make rice, quinoa, or potatoes on the side.

So here's an example of my daily menu:

breakfast - lately I've been liking Arrowhead Mills' Rice and Shine Hot Cereal, or Rice Chex. To both I add ground flaxseed for extra IF and sometimes frozen fruit
lunch - leftovers from dinner, or a sandwich - GF bread with hummus, ham, peppers, lettuce, tomatoes. Often I just throw the sandwich stuff in a container and bring it to work along with rice cakes and make these open-face rice cake sandwiches at work
dinner - I eat a lot of chicken - stew it with some vegetables, make soup with rice noodles, grill a piece of breast, bake the entire bird in the oven, make chicken curry, "pulled chicken barbecue" (like pulled pork but with chiken)...pretty much whatever recipe I come across and looks good, as long as I make it low fat and within my dietary requirements. Or fish - baked in the oven or grilled, with the sides I wrote at the top and some steamed veggies. I also have time periods when I can tolerate salads so I make salads with grilled chicken.
Snack - I'm OK with eggs as long as I don't eat too many so I'd eat hard a boiled egg with rice cakes, baked sweet potatoes, cereal, fruit, sometimes a Luna bar or raw almonds (or home roasted), or a piece of a GF cake/brownie, rice crackers with avocado, hummus, Trader Joe's red pepper spread
drinks - water, tea (chamomile, fennel, mint, lemon, fruit-flavored herbal tea). Occasionally I have a can of diet coke because I don't think it causes me problems, although I'm not completely sure.

Now that I'm trying to think about it it's actually hard for me to think of stuff that I eat, just because lots of times I just throw a bunch of stuff together and make a stew or a casserole and then have leftovers.

By no means I'm saying that eating like this works, it's just an example of what I'm eating right now and I'm hoping for the best . I hope you're feeling better .

Can you suggest a brand/type of GF bread? I can't find one that is affordable, safe, and tastes decent! Or are you still making yours from a mix?

FYI, not sure if you know or not but I think rice chex contains barley...and the Luna Bars are not GF.

Brown rice pasta seems to constipate me. And I, unlike you, hate to cook!

You can handle all these ingredients? I didn't think ham was safe.

What are your favorite veggies to eat steamed? And what fruits can you "handle" as a snack without having to eat SF first?

Hi Erilyn! I'm much better today thanks. The bloating was really bad yesterday but i still managed to have a BM yesterday evening and this morning. So maybe this is now just the natural course of my IBS since my constipation is a million times better than it has ever been. If that's the case i'm with you- happy to deal with it!

Jordy, you're absolutely right about Luna bars. They must have been on my mind since those days when I was only doing wheat free. They are wheat free but not GF. Luckily I haven't had one since that cookie mishap anyway .

Rice Chex is gluten free now, just make sure you get the new version. It even says "gluten free" on the box. They changed the formula so that it doesn't have barley malt anymore.

I still make my GF bread from the mix. My favorite is Pamela's . I purchased it in a box of 6 from Amazon so it's not as expensive as at the HFS.

hummus, ham, peppers, lettuce, tomatoes - yes, I can usually tolerate them. Usually I eat them with rice cakes or GF bread so I guess that does the trick.

Ham - I've never really had problem with ham. I buy the most plain one I can find (it still has additives but not as much). I also forgot to mention that often I just bake a chicken breast and once it's cold I slice it up and use that in place of ham.

Veggies - for steaming I like sugar snap peas, yams, carrots, parsnips, squash, zucchini, asparagus. Those are my staples. If I feel adventurous I throw in a little (and I mean very little) bit of broccoli or green beans.

Fruits - I like mangoes, apples, applesauce, bananas, watermelon, peaches, apricots, pineapple. I seem to be fine with these.

Can you eat all those veggies on your sandwich raw? I'm impressed!

Yes, I can eat all those veggies on my sandwich raw. I think it's because of the bread/rice cakes which make a good SF base. I hope I didn't make it sound like I just pile tons of them on, I'm sorry if I gave you that idea. Usually it's just a few slices and it's not all those veggies at the same time, usually it's just one or two. Sorry I didn't make that clear in the first post.

Fruits - yes, I can tolerate those on empty stomach so that's how I eat them. Except for the pineapple, I don't know why but I only want to eat it after dinner .

Awe, your just too sweet. I would love to add some raw veggies to my plain sandwiches....but thanks for clarifying you don't add lots.

One more question, I promise. Do you peel your apples, peaches, etc before you eat them on an empty tummy?

That is so weird that you want pineapple after dinner....cuz that's when I want it. (although I have banned it cuz I am scared of the acid...like oranges). I miss oranges.
