As I am sitting here at breakfast time reading all of the new posts, I'm enjoying a fresh baked slice of the "Brown Sugar Banana Bread".........and it is DELICOUS! (still warm from the oven) Hard to believe this recipe is low fat! I have also tried the "Sweet Cinnamon Zucchini Bread" and that was fantastic as well! My husband has been great with trying all of the recipies from this wonderful book and we have tried many main dishes as well. My tummy has not felt this good in quite a while, and with treats like this I don't feel like I'm missing anything. I encourage others with IBS to give the recipies a try........most are extremely easy to prepare too, which is an extra added bonus.
So.......... which one do you recommend I try next? I was thinking of going for the "Sunshine Bread"...suggestions?
Mmmmmm Happy eating all

Try the orange cornbread - the recipe is on the recipe board - that is my ALL TIME FAVORITE! It's also good with lemon zest instead of the orange zest....happy eating!

My absolute favorite recipe from the Eating For IBS cookbook is the Pumpkin Apple Spice bread - it's wonderful. The recipe in the book is a little high in fat for me to have for breakfast so I make it this way.
I also really like her Gingerbread though that's more of a dessert thing to me and her Simple Sweet Cornbread though that's more of a side-dish thing to me - it's great with , soups, stews, and Tex-Mex type dishes.
Outside the bread department, Heather's Chocolate Silk Pudding is to die for. For a meal, try Pizza with Shredded Chicken, Scallions, and Smoky Sweet Barbecue Sauce. I use Pillsbury Pizza Crust rather than make my own but I do make Heather's BBQ sauce - it's fabulous on this pizza.
The Italian Lemon Tuna Sandwiches are great and so is the New England Clam Chowder. I haven't made it in ages but when I first started Heather's approach I ate Baked Blueberry Pecan French Toast a lot - I just used regular syrup.
In Appetizers, I love the guacamole - we eat that for lunch almost every week.
There's an old thread on the Recipe Board where people list their favorite recipes from the EFI Cookbook. You might find the reviews interesting.
Enjoy!
