What to eat when you don't want to fix a meal?

Maybe I'm on the wrong board but I was wondering what do you eat when you don't feel like a meal I get tired of trying to find a souble and a "if" and round out a meal especialley when its late! thanks in advance.

my staple is a sandwich. Organic shaved turkey or chicken breast on french bread with mixed berry apple sauce. A few baked lays or corn chips.

I've been trying to keep some tofu veggie dogs on hand. Steam them for a few minutes, then throw then on a white bun with whatever condiments you can tolerate and Voila! a meal in well under 10 minutes.

I do the same with turkey or chicken hot dogs. Whichever I have on hand.

Do you mean something quick and easy? Or something you don't have to cook? I hate to cook, so I've found some "tricks."

I always try to keep some canned soups on hand and French bread. I'll also add some sliced non-dairy cheese (almond cheese) for me and real cheese slices for the boyfriend to round out the soup and bread meal. Some canned soups I like and that are safe and contain SF (potatoes, pasta) and IF (other vegetables):

Progresso Minestrone
Progresso Manhattan Clam Chowder (tomato-based)
Muir Glen Organics Garden Vegetables

Other quick meals (you can find recipes if you do a search on the Recipe board -- they usually contain a good mix of SF and IF so you don't have to figure anything out): pasta salads, sandwiches, microwave baked potatoes and other vegetables. I usually make tuna pasta salad, which only takes about 15 - 20 minutes. When the water starts boiling, I throw in frozen vegetables and the pasta and let them cook at the same time.

You could also buy one of those roasted chickens from the grocery store. Serve with mashed potatoes or sweet potato fries or rice. Add another vegetable if you want more IF -- steam it or microwave it. Make sure to take off the skin from the chicken for yourself. YOu could also shred the chicken and make quick, chicken tacos/burritos. Add some lettuce, shredded almond cheese, diced olives and/or tomatoes, salsa. Serve with Baked Tostitos and rice.

I don't know if this is what you are looking for but when I just don't feel like cooking I make chicken and rice. It takes about 15 minutes or so.

-1 lb of boneless skinless chicken breast- cut into bite sized peices
-rice-a-roni type rice chicken flavor (if I remember correctly rice-a-roni has milk in it. My store brand does not so I get that.)
-frozen veggie of your choice- we like mixed. Have also used just corn and peas.

1) Spray a skillet with cooking spray
2) Trim fat from chicken and cut into bite sized peices.
3) Cook chicken in skillet untill almost done.
4) While chicken is cooking start rice.
5) Cook veggies by directions on package. (I never measure how much. Maybe a 1/2 cup.)
6) At around 5 minutes left on cooking time to rice add chicken. Recover and cook.
7) Drain veggies
8) Add veggies and mix.

My kids love this meal and it is soooo easy to cook.

My schedule is crazy. When I don't have time to cook I pick up a fresh loaf of French Bread from the bakery at my grocery and some organic sliced chicken or turkey. I spread the slices of chicken or turkey with a safe sauce or condiment (I like a thin layer of IBS safe cranberry sauce). Roll the slice up and you have a little treat with bread. This does not include much IF but it doesn't seem to bother me if I have had IF during the day. Also this won't win any prizes from a dietician but it works in a pinch. I have also added a few Boars Head pickles (which are mostly IBS safe--check the labels).

I was thinking the same thing..LOL I use mixed berry applesauce but I would love to have cranberry sauce just thought that wasnt safe.

P.S. I do the same for lunches at work. I use either applegate farms at whole foods sliced deli or boars head all natural turkey at local foods stores. Just an FYI for some looking for organic safe deli.

I make it myself from Heather's recipe. Basically it is just a bag of fresh cranberrys boiled with sugar and water with a little lemon juice or zest in it. It keeps in the fridge for two or three weeks at a time.
