I am running out of ideas on how to eat my oatmeal. When my IBS are flaring up, that is one of the safest foods to eat for me. I eat it with:
1. soy butter, salt, pepper 2. brown sugar, cinnamon and raisins 3. some sort of fruit
Any other ideas?

I used to really enjoy granola with fruit and yogurt. Since both of those are now off my O.K. list, if I keep my oatmeal thicker and then top it with 4 oz of Soy yogurt it gives my mouth a similar experience. I also enjoy the contrast of the hot oatmeal and the cold yogurt.

I like to add dried cranberries to my oatmeal. That is after I've given them a whirl or two in the food processor to chop 'em up.

I make mine with soy milk and stir in dried cranberries and either a half cup of canned peaches or canned pears.
Once in awhile, I stir in a banana instead.

Usually I just have the instant oatmeal packets, but sometimes they can be too sweet for me in the mornings.
If I prepare plain, traditional oatmeal (no milk), I will add some Fruit Loops to it! I don't think a lot of people would like that though. But I enjoy the crunchy with the mushy.

I love oatmeal. My favorite is raisins, cinnamon, nutmeg, and some stevia. It's also good with a little applesauce and cinnamon (or pumpkin and pumpkin pie spice). Another yummy one is sliced or mashed banana (cinnamon works here too). Sometimes I will add some blueberries or raspberries (frozen, but slightly thawed) with a little vanilla extract.
You could try going to http://www.recipezaar.com and doing a search for oatmeal for more ideas.

Well, I'm trying out a few different kinds. My favorite so far is this recipe I found on Recipezaar.com. Let me go grab up the link. *Grin* Kree posted it on Recipezaar.com and she states in the recipe description that she got it from VegWeb. I posted a review of it, too, it's the one from 'blancpage'. Here's the link for Pineapple Oatmeal:

ALso, I haven't tried these recipes yet, but I found other ways to eat oatmeal.

Oatmeal Muffins http://www.recipezaar.com/947 (use an egg substitute and a buttermilk sub - like Soy Buttermilk posted by Kree http://www.recipezaar.com/69466)
Otherwise, my standby oatmeal usually includes cinnamon, brown sugar, raisins or other dried fruit, and some Silk Unsweetened Soy Milk.

I got a free sample with my grocery order the other day. It is a packet of Quaker brand Simple Harvest Instant Multigrain Hot Cereal. The flavor in this sample is Maple Brown Sugar with Pecans (sounds yummy!) and the ingredients sound fine, too. Whole grain rolled oats, whole grain rolled wheat, rolled barley, whole grain rolled rye, sugar, pecans, whole flaxseed, oat flour, natural flavors, salt, molasses. Contains wheat and pecan ingredients. Can be made with water or milk (or milk substitute). Fat grams per pouch is 3.5 (Sat 0.5, Trans Fat 0, Polyunsat 1, monounsat 1.5). I thought about buying some, they were on sale at my Fry's grocery store (Kroger's) for $2 or $2.50 per box but I decided to wait since I hadn't tried the sample yet and didn't know if I'd like it. Usually those ingredients don't bother me, and the flavor sounds great. With normal instant oatmeal, my favorite is usually maple and brown sugar or apple cinnamon.
