Thanks for the advice, I will keep it in mind, for sure. Some of my costs are from experimenting with what works (what tastes right, what doesn't ruin a recipe, what doesn't give me attacks, etc.)

I am a bit concerned about the Smart Balance. I don't bake a lot but I bake often enough that it's important to me that my baked goods aren't ruined. I love using unsweetened applesauce to replace some or all of the oil in baked recipes, but you can't always replace butter or margarine in everything. I use it so often that I have to find the right spread to use that will be useful for anything that calls for butter or margarine. I've got err.. 16 oz of Smart Balance with Flaxseed Oil and I just re-read the ingredients/label. It states it's lactose and dairy-free (YAY!) and the ingredients seem fine to me too. Oh, you are so right, I just read the Smart Balance (regular) label and WHEY is in the first line of ingredients DOH how'd I miss that!? Glad there's only about 2 TBSP left of that stuff then I'll be starting on the Smart Balance with Flaxseed Oil. I don't remember how much fat there is in the Flaxseed Oil versus the Light, but I didn't see anything about the Flaxseed Oil kind separating due to higher water content. Thank you again, for the help.

Btw I usually spend 2-4 bucks on french bread per month because I buy the freshly baked loaves. Although regarding HFCS being in regular 'shelf' breads like just a typical white bread or anything else that isn't fresh from the bakery, I will probably stop freaking out over that, as I hardly ever noticed a problem with eating it before. I eat white rice or potatoes almost every day though, and those aren't usually that expensive at all, and I hardly ever get bored of those.
