hi all I hope every one is doing okay, I just have a quick question about corn. As I've got problems with fructose I have been avoiding fructose containing foods and HFCs' and feel sooo much better! My question is does corn have fructose in it? I don't ususally eat it but was wondering if others with fructose problems get on well with it. Thanks again for any helpx
The starch from corn is used to make corn syrup which is 100% glucose. A number of steps involving the use of enzymes converts the glucose to fructose for use in the preparation of HFCS. Corn itself contains a very small amount of free fructose and glucose ( about 0.5 gr / 100 gr of each). On the other hand corn is very high in IF

Not sure about cornflakes. I think it depends on the food processor. For example, Kellogg's cornflakes contain 1 gr of dietary fiber (IF + SF) per 30 gram serving. Unfortunately it contains HFCS too. I think that some HFS sell cornflakes without HFCS. In general I believe cornflakes contain more IF than SF.
