I'm not sure what you're eating now, but...

Bagels, toast, soy yogurt, soy smoothie, oatmeal, rice chex/corn chex, egg white omlette, and of course Shanna's pancake recipe!

i eat homemade banana bread every single morning! sometimes i will make a diff. breakfast bread, but usually it is banana bread. and tea, of course... with soymilk and sugar. today i put rice butter, cinnamon, sugar, and a few toasted oats, on my banana bread... yummy!

barbara's cereals and oatmeal are also yummy, as are Luna Bars or yogurt mixed with different berries.

What's in your banana bread? Hwo do you make it? Can you make it w/out sugar?

I love oat bran hot cereal with soy or rice milk (I switch between the two every other day) and a sprinkle of brown sugar.
I also love scramble egg whites with safe cheese melted on top and a piece of toast.

My typical breakfast is egg beater scramble 2 eggs. slice of fruit bread either banana or zucchini and half of soy yogurt 6z ( flavored liked raspberry or lemon or peach).
Others are some days wheatfree waffles with slice banana and cup of hot chocolate soy milk. Some days 2eggs(beaters)
1/2 cup cooked rice and diced avocado on my eggs.
I always will alternate and add some sliced sourdough bread in place of rice. I want to try making french toast this weekend. I find I eat real good from the time I get up til about 5pm after five tummy is full for the day and usually have a lite snack and cup of herbal chamomile tea.
Have fun trying different foods and finding what works for you.

Ruchie: Here is how I make my banana bread -- keep in mind that i can eat wheat and oats... i also use two eggs b/c two eggs in a huge loaf of bread doesn't affect me... yes, i use sugar.

1 1/2 c whole wheat flour
1 heaping cup quick oats
1/4 c + 2 T brown sugar
1/4 c + 2 T white sugar
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt

MIX WELL!

2 large or 3 medium (very brown) bananas, well mashed
1/4 c extra virgin olive oil (I use colavita)
1/2 c applesauce
2 large eggs
1 T vanilla

MIX WELL!

Add wet ingredients to dry ingredients until well combined.

Mix in 1/2 to 1 c of chopped pecans.

Pour into 9 x 5 loaf pan thinly coated w/ extra virgin olive oil cooking spray.

Spread a thin layer of quick oats on top of the batter.

Cook at 350 degrees for 1 hour or until a cooking scewer or knife inserted in center comes out clean.

Allow to cool for at lease an hour before cutting!

I usually freeze half of it and bring it out after I have devoured the first half (which I keep in the fridge). I store each 1/2's of the loaf in ziplock freezer bags.

Tastes good toasted... you can top it with rice/soy butter and even some cinnamon and sugar if you want. )

I hope you like this... I have been eating it every day for over a year, lol.

The only alterantive would be brown sugar or a sugar substitute?

Ruchie checking on the web sugarfree recipes, you can cut the amount of sugar and replace with juice and maybe even applesauce. Heather the great chef shed some light on this.

Wow, sounds yummy...and not too sugary eaither! A few tablespoons is fine...

I plan to try this as soon as I get back to my kitchen again (it misses me when I'm sick!)
