sodium hydorxide in pretzels? Is this safe?

Does anyone find that their pretzels have sodium hydroxide - I looked it up and it is some type of "lye". It just does not sound safe? Any thoughts or expereince?

It is safe. Sodium hydroxide is used as a ph balancer used to adjust the alkalinity. It is used in very small amounts. It is converted to salt and water in the stomach acids.

Thank you Syl - I finally found unsalted unsweetned lowfat pretzels but they have sodium hydroxide as the last ingredient and I was not sure about it being safe? So it turns to salt and water in the stomach which in turns adds to the sodium level in your body? Does it take alot of stomach acid to do this? I am always concerned about any knew digestion process. Thank you - Debbie IBS_C

The amount of sodium hydroxide in the pretzels is very small. Sodium hydroxide (NaOH) reacts with hydrochloric acid (HCl) in the stomach to form water and salt (NaCl).

The amount of salt produced by this process will likely be a very small percentage of the total salt in the pretzel you ate. Your stomach continuously produces acid so you don't have to worry about using too much up
